Slow Cooker Spiced Oatmeal Recipe. Easy & Healthy!

No time for a warm, healthy breakfast? Make a big batch of this slow cooker oatmeal once a week and have a nutritious breakfast all week long!

Wakefield Ultimate Bootcamper Maria is an accountant with a busy schedule. When working 50+ hours during tax season, she barely has time to eat breakfast, let alone prepare a hot meal. So when she found out her daughter had special dietary needs, a nutritionist helped Maria discover a healthy breakfast for the whole family.  Maria makes this slow cooker recipe ahead of time and it stores in the fridge for up to a week. Then, when it's breakfast time, it takes a couple minutes to re-heat for a meal that keeps you full for hours.

Slow Cooker Spiced Oatmeal Recipe



1 cup steel cut oats
2 1/2 cups water
2 tbsp toasted wheat germ
2 tbsp flaxmeal
1 tbsp sugar
1/4 tsp salt

Place all ingredients in slow cooker & cook for 2 hours on high
When done add 1 tsp vanilla extract - stir again & separate into 1/2 cup servings.  

Re-heat Instructions:
In the morning, reheat for 2-3 minutes with milk or cream & the following - you can pick & choose or do what you like:

cinnamon
1 tsp brown sugar
1 tbsp natural peanut butter
1/4 cup walnuts
1 scoop protein
Almond milk (stir well to break up before heating)


Maria's Notes: 
Market Basket has the cheapest steel cut oats & flax - Bob's Red Mill brand - that come in bags.  The flax & wheat germ need to be kept in the fridge once opened - they both last months that way.
